There’s nothing like a bowl of hot soup on a cold day. This Sante Fe soup recipe was passed to me by my cousin. Every time, I make this particular soup it’s a big hit! And, it’s so easy and quick to prepare.
3 cans of shoe peg corn
1 can black beans
1 can kidney beans
1 can pinto beans
1 can Rotel with diced tomatoes and chiles
1 large can diced or chopped tomatoes
1 chopped onion
2 lbs ground turkey or ground beef
2 pkgs taco seasoning mix
1 pkg Hidden Valley Ranch dressing mix
2 cups water
Place first six ingredients in large crock-pot or dutch oven. Add dry taco seasoning and ranch dressing mixes and water. Mix well. Cook ground turkey or beef and onions together. Drain well. Add to crock-pot or dutch oven. Simmer until heated thoroughly.
Serve with cornbread or crackers. Can be topped with sour cream and/or shredded cheese.
